Ingredients
QUESTIFIED CHOCOLATE CHIP MUFFINS
Ingredients:
- ⅔ cup almond flour
- ¼ cup coconut flour
- 1 scoop Quest Salted Caramel Protein Powder
- ¼ cup zero calorie sweetener
- 2 tsp baking powder
- ¼ tsp salt
- 1 Quest Pumpkin Pie Bar, lower into small items
- ½ cup + 2 tbsp almond milk, separated
- ½ cup vegetable oil
- ½ cup pumpkin puree
- 2 eggs
- 1 tsp vanilla extract
- ¼ cup sugar free chocolate chips
Method
- Preheat the oven to 350 F and put together a muffin tin with 12 liners.
- In a mixing bowl, stir collectively the almond flour, coconut flour, protein, sweetener, baking powder and salt.
- In a microwave secure mixing bowl and soften the pumpkin bar and a pair of tablespoons of almond milk collectively in 20 second increments, stirring between every till clean.
- Add within the remaining milk, oil, pumpkin puree, eggs and vanilla and whisk till clean and properly
mixed. - Add the dry substances to the moist and use a rubber spatula to combine till mixed.
- Use a cookie scooper to distribute the batter between the liners. Top every muffin with just a few chocolate chips and bake for 18-22 minutes and golden brown.
